Restraint, mostly. Houses with this much original character need the new work to know its place, and that applies hardest to kitchens and bathrooms, where the temptation to import a look from somewhere else is strongest.

In an Arts and Crafts house the joinery is the architecture. Matching it badly draws far more attention than leaving it alone would have.
